Tofu Puzzle

Life is strange. A sequence of events can be so perfectly taylored to an individual that it really makes you wonder if there's some truth to the "Truman Show." Of course, I'm not suggesting there are cameras and mics hidden behind our bathroom mirrows but rather a series of puzzle pieces that just happen to fit together, even though by themselves they make no sense.

When Honey and I first came to know each other, we were linked by one (not-so-pleasant) event.
So time came and went and we got to know one another. Turns out she's wonderful girl with many similar interests to mine :) Great friendships can come out of the most unusual circumstances.

So today, to celebrate lifes' puzzle pieces, I am recommending this delicious recipe by Honey.

Panfried Tofu with Sesame Soy Dressing

10 oz pkg tofu/sliced and pat dry
1 TB oil
salt
pepper
Add oil to a preheated skillet over medium-high heat. Add tofu slices and brown on both sides, about 5-6 minutes on each side, or until golden brown. Salt and pepper each side to taste.
For dressing:
1/8 tsp minced garlic
1 TB minced scallion
1/2 tsp toasted sesame oil
1/8 tsp red pepper flakes
1 1/2 TB soy sauce
1/4 tsp sesame seeds, toasted
Mix ingredients together in a bowl. Spoon over pan-fried tofu.
Serve warm immediately with rice.

Break the Fast

Today I started my day with a delicious bagel! I call it a-piece-of-art bagel. Not only is it a tasteful combination of textures, it also has a large spectrum of flavors! It's creamy, it's chewy, and it’s crunchy and grainy. Perfect for mornings because of its ability to wake you up and challenge you with all the components of this one tasty deliciousness.

What you need:
1 whole wheat bagel (toasted)
2 tbsp natural peanut butter (organic, with omega 3) or almond butter
1 tbsp pumpkin butter
1 tbsp fruit spread
(different from jelly- fruit spread has 1/3 the sugar)
2 tbsp of soy nuts + trail mix (crushed)

Toast the bagel, first spread it with peanut butter on both sides, next layer is pumpkin butter, followed by fruit spread and sprinkle with your crushed nuts.


I usually eat it with fruits on the side and to be perfectly honest, I do not finish the whole thing.
But its gooooood :))
Perfect with unsweetened tea or coffee.

Random thought:

I had to argue with myself today to get out from my nap to go work out. I wake up, the room is dark but it's still reasonably early (around 8 pm). I'm cozy. Reaaaaally cozy. Seriously though, I had to really battle myself to get up and go to the gym!

But I did it and was very happy with my small accomplishment.

After running a couple of miles and a series of sit-ups I feel much better!

So next time you're feeling lazy- ARGUE with yourself :))

Solving hunger one meal at the time

Thankfully, many people around me are vegan or at least tried it at one point or another. After I ran out of options *and food* to eat, I turned to my friends for some advice. And what I come to find out - there is even a vegan DUCK meat! And just all sorts of vegetable goodness made to taste similar (and sometimes exactly) like meat.

Shopping hungry is not good :)

I walked in to a healthy grocery store nearby and with a help of a very nice manager we found some vegan deliciousness.

Italian Sausage, steak tofu, mac and cheese (WOW! So good!), and TOFURKY lunch meat.
I'll post photos of these foods very soon. And as I discover more, I will definitely update.

Oh a free dessert? Oh another one? Oh is it vegan? Oh what is silly, silly question...

As I stepped out of a private jet into a private island called VEGAN (its my made up land and yes, I do have a private jet there :))

Anyway, as I took a first step I sensed fear in the air. It was me. I also heard a strange sound, sort of like a growling. ITS MY STOMACH people! :) The first couple of days the food just sort of came as I went. Thank GOODNESS for Chipotle! Thank you! Chipotle:Rice, black beans, veggies, corn, salsa, and guacamole. Topped with cilantro and lime.

You know how huge those burritos are, right? It was gone. It was gone so fast! I felt like a little piggy that went to the market. That was me. So it was time to step up and start cooking.

Little piggy actually goes to the market this time and got tofu. A soft kind. Not a good idea if you're trying to make a stir fry. Oh jeeezz... I was so hungry all the time my brain skipped right over the label reading part. All I saw is TOFU. TASTE GOOD WITH OTHER THINGS. ABSORBS FLAVOR. PROTEIN.First stir fry didn't come up bad actually.Canola oil, garlic, onion. Tofu, mixed veggies, sesame oil, soy sauce, toasted sesame seeds. Over bed of brown rice.

Barely Vegan: Start here!




Just about a week ago this word for me was associated with a diet so healthy and pure that I couldn’t' even fathom what it would be like to actually try it. Hm...."Well aren't you a Nutrition major?" Well yes I am :)
I LOVE FOOD! Flavors! Textures! Aromas! Fat! Animals! Saturated fats! Antioxidants! BRING IT! :))

My major is funny. You know those horrible PETA videos where IF you finish one, you swear not to eat meat ever again? for about a day or two
Well, similar (not as cruel) videos were shown in my classrooms over and over...and over......and over again :) By like the 6th one you start thinking "Ok....freaking....what is this? This is just pure madness." Well, long story short I still went home and ate meat and dairy. There was no defined connection between what was shown and what I saw- A delicious piece of gorgonzola that goes quiet well with my Riesling. UNTIL

That did it.

So. Due to this sporadic decision, I was completely unprepared and unarmed for this battle against the dairy and pretty much the whole animal farming industry.

My fridge when I got home:

peppered turkey
smoked gouda
eggs (boiled from before)
1/2 1/2 (for tea)
veggies
goat cheese
butter

Mmmmmyeaaah...not many choices for a poor little vegan.

I was hungry. I was REALLY hungry. ALL-the-TIME.
